Waldorf Astoria Beverly Hills Debuts Baldi and Gemma After Jean-Georges Exit
In the summer of 2017, the Waldorf Astoria Beverly Hills opened its doors, and it has recently transformed its dining options. The flagship restaurant of Jean-Georges Vongerichten closed in 2023, making way for two new establishments that launched earlier this year. One of these is Baldi, a Tuscan steakhouse led by chef Edoardo "Edo" Baldi, which specializes in prime and Wagyu steaks alongside family recipes, with interiors crafted by Ezequiel Farca Studio. Meanwhile, Gemma, located twelve stories up, features chef Peleg Miron's Pan-Asian cuisine with a Californian twist, offering stunning views of the Hollywood Sign. Jim Kearns, the beverage director, curates the drink selections for both venues. The hotel, designed by Pierre-Yves Rochon, boasts Art Deco interiors and 170 rooms with expansive floor-to-ceiling windows, encapsulating a distinctive Golden Age Los Angeles ambiance.
