Stephen Starr Opens Slim's Steakhouse at Bal Harbour Shops with Gachot Design

Restaurateur Stephen Starr has opened Slim's, a 183-seat steakhouse at Bal Harbour Shops in Florida, occupying the original storefront of his former restaurant Makoto. Named after Lauren Bacall's character in To Have and Have Not, the venue draws inspiration from Hollywood's Golden Age. Starr collaborated with design firm Gachot, co-founded by Christine and John Gachot, to create interiors blending Palm Beach elegance with Miami Beach spirit. Features include Nero Marquina and Calacatta Viola Monet marble checkerboard floors, honey-hued leather banquettes, and murals by illustrator Christoph Niemann, known for his work with The New Yorker and The New York Times. The menu, led by chef Anthony Micari, offers seafood towers, caviar, American and Japanese Wagyu, and a signature cheesecake from Barclay Prime in Philadelphia. Desserts include Champagne cake and tableside bananas Foster. A martini-heavy cocktail menu is also featured. Starr aims for a warm, inclusive atmosphere for locals and visitors.
