Park Hyatt Milano's 'Gesto e Materia' merges contemporary art with fine dining
The Park Hyatt Milano, located steps from the Duomo, has launched 'Gesto e Materia, Cucina e Arte in Dialogo,' a program uniting contemporary art and fine dining. The hotel, built in 1874-1875 by G.B. Torretta and owned by the Pritzker family, features 108 rooms across six floors. Its restaurant Pellico3, led by Executive Chef Guido Paternollo (born 1991), presents menus inspired by artworks from Claudio Verna (born 1937), Turi Simeti (1929-2021), and Tancredi Parmeggiani (1927-1964). Paternollo, formerly with Enrico Bartolini, Marc Veyrat, Alain Ducasse, and Yannick Alléno, creates dishes that echo the artists' techniques. Verna's 'Oro Antico' (2020) inspires an Irish Coffee of champignon; Simeti's 'Nove Ovali in Grigio' (1966) influences a lamb scottadito; and Parmeggiani's 'Untitled' (1954) pairs with a rhubarb-scapece strawberry dessert by pastry chef Alessio Gallelli. The hotel's art history includes works by Lucio Fontana (2007), Anish Kapoor (2013), and Velasco Vitali (2017). The program aims to reveal affinities between culinary and visual languages.
