Mûre's Arnaud Dalibot Runs Unmechanised Farm-to-Table Supply Chain Feeding Paris
In 2014, Arnaud Dalibot, previously a finance executive at Moët Hennessy, transitioned from the champagne industry to establish Mûre, a farm-to-table venture that sources from a single supply chain for Paris. Located in Presles-en-Brie, 40km southeast of the capital, the farm spans 1.5 hectares and grows 150 different types of fruits and vegetables using market gardening techniques. The produce, which is transported via electric vehicle at 5:00 AM, supplies Mûre's grocery store and five restaurant canteens. Dalibot manages the operations three days a week while crafting seasonal menus. At the new canteen on Rue des Italiens, prices range from €7 to €14, with hot meals priced at €10.50. Mûre's approach may pave the way for food sovereignty in France.
