YYPLUSPLUS Designs SDD1 Restaurant with 14-Meter Bar in Madrid's Chamberí

YYPLUSPLUS, led by César Cañadas and Óscar Sánchez, has designed SDD1, the new Sala de Despiece restaurant located at Calle Alonso Cano in Madrid's Chamberí neighborhood. Spanning 240 m² with a capacity for 60 people, the project evolves the original Sala de Despiece concept launched in 2013. A 14-meter-long bar with an integrated kitchen runs the length of the space, drawing inspiration from butcher shops, fish markets, and central markets to create a sensory experience focused on product and process transparency. This layout encourages direct interaction between diners and culinary preparation, emphasizing immediacy and authenticity. Adjacent to the restaurant is the Fundación del Producto (FDP), a complementary space functioning as a shop, showcase, and meeting area where producers lead tastings, presentations, and educational sessions. FDP is divided into three zones: an anteroom for product display and sampling, a private preparation area, and an active dissemination space featuring a worktable with a central drain for hands-on training. The design balances continuity with innovation, referencing the restaurant's origins on Calle Ponzano and its recent evolution with Sala Cero on Calle Ayala while introducing new spatial strategies.
