Sophie Dries Opens Quartz Café in Paris with Mineral-Inspired Design

Sophie Dries, a local architect and designer, has launched Quartz Café in Paris's 7th arrondissement, her first specialty coffee shop. Located at 36 Rue de Bellechasse, 75007 Paris, France, the venue reflects Dries's fascination with minerals, incorporating materials like pyrite, selenite, and gypsum. The café features a Corten steel floor, a counter inspired by the Octa bar presented at Mobilier National in autumn 2025, and a Styx mirror with passementerie details. No indoor seating is available, but a red plywood bench sits outside. Baristas wear aprons by L/Uniform and use metallic utensils, while a custom sound system by Matéo Garcia provides music. Drinks include beans from Partisan and matcha from Kyoto via Komā, with pastries by Toutia offering textures like cocoa sablés and yuzu mochi. Dries aims for the café to inspire conversation in the design world, akin to Café de Flore's historical role. The project includes an advanced water filtration system using dolomite with quartz. Windows with tie-dyed curtains conceal the intimate space, which opened recently as part of a trend of new artisanal roasters in Paris, following examples like Café Nuances by Crosby Studios and Café Shin by Uchronia.
