German Union Warns of Eroding Worker Protections Amid Long Hours in Bakery Industry

His official night shift runs from 8:30 PM to 4:20 AM but often extends to 6:00 or 7:00 AM. During these shifts, he handles 150-kilogram dough batches and produces hundreds of traditional Christmas cakes. The high season frequently requires shifts of nine to ten hours, with work occurring five to six days per week, including holidays. Markus describes the physical toll, noting that prolonged labor takes a significant physical toll, yet workers persist despite the strain.
