Meanwhile, Jeni Britton, founder of Jeni's Splendid Ice Creams, debuted Floura, a line of dehydrated-fruit bars made from cores and rinds, addressing the 'fiber gap'—less than 10% of Americans consume the daily recommended fiber intake. Britton, who became a fiber advocate during the pandemic, packages the bars in luxe wrappers and markets them as 'feeding your Eden.' In 2025, entrepreneur Alan Lin, a self-described 'fiber daddy,' released Liquid Salad, a green purée in a baby-food pouch, inspired by his 2024 trip to Japan. Lin promotes the product with absurd videos of himself eating sulfurous foods to generate farts, aiming to make high-fiber diets convenient for 'lazy Americans.'
