Vito Cortese Opens Raw Vegan Café at Florence's Museo Novecento
Vito Cortese, an innovator in Italy's raw vegan pastry scene, has secured the contract to oversee the recently established Cortese Caffè 900 at Florence's Museo Novecento, which debuted in September 2021. This café specializes in vegan and gluten-free beverages, desserts, and coffee, and includes a selection of magazines and exhibition catalogs. Born in Puglia in 1977, Cortese trained in raw cuisine in the US with Michelin-starred chef Matthew Kenney and opened Grezzo in Rome in 2014. He also started gelaterias in Dubai and Doha. The café is situated in a former travel agency within the Leopoldine complex. Mayor Dario Nardella highlighted its significance in the area's revitalization, which is undergoing new developments. Cortese is currently recruiting staff.
