Pablo Roig designs SteakBurger Las Tablas with charred pine, natural oak, and granite

Interior designer Pablo Roig has completed a new SteakBurger restaurant in Las Tablas, Madrid, translating the brand's culinary universe of fire and meat maturation into a coherent spatial experience. The project uses materials as narrative layers to convey brand values, with charred pine treated with the Japanese Yakisugi technique symbolizing fire and protection, analogous to meat aging. Natural oak on floors, ceilings, and furniture provides warmth, balancing darker finishes. The elongated, narrow space, over 30 meters long with large windows, required light control through wooden Venetian blinds to create intimacy and enhance quality perception. Artificial lighting, warm and focused, becomes dominant in the darkened environment. Acoustic comfort is addressed with sound-absorbing solutions integrated into the false ceiling. Spatial organization sequences user experience, featuring a prominent black raw granite bar at the entrance for material contrast. Variations in furniture height create distinct areas, from exposed zones near the facade to more secluded interior spaces. An open kitchen and aging areas amplify the narrative around meat maturation, integrating production and consumption visually. Roig emphasizes storytelling through materials, light, and spatial arrangement to intuitively communicate concepts like embers, wood, and smoke.
