Giant Knack Sausage Performance in Strasbourg

festival-fair · 2026-04-23

On June 8, 2002, a festive culinary and artistic performance titled 'la Chasse au knack' took place at Place de la Gare in Strasbourg, France. The event, a homage to Lewis Carroll's 'The Hunting of the Snark,' aimed to set a Guinness World Record for the largest knack sausage. Organized by Olivier Lerch, the performance involved the École supérieure des Arts décoratifs de Strasbourg and the local butchers' and charcutiers' guild, who produced a pair of sausages over two meters long and weighing over two hundred kilos. The evening featured a mix of music, video, dance, and poetry, with contributions from Joël Hubaut, author of a treatise on sausages, Frédéric Le Junter, Fanny Poltron-Fouillet, Kim Ju-Joung, and Wonderbatten. After the festivities, the sausage was distributed to Restos du Cœur. The event aimed to transform the image of charcuterie through sensory engagement.
