Chef Paolo Griffa Creates Art-Inspired Menu for Ruinart Based on David Shrigley

Paolo Griffa, a chef with a Michelin star, has created a playful menu called "Unconventional Food For Art" for Ruinart, inspired by the British artist David Shrigley. This unique dining experience launched on December 10, 2021, at the Petit Royal restaurant, located in the Grand Hotel Royal e Golf in Courmayeur, Italy. Each dish reflects Shrigley’s "Unconventional Bubbles" series from his 2020 residency at Ruinart. One standout dish, inspired by Shrigley's artwork featuring champagne bottles, showcases a vegetable mosaic with Middle Eastern spices on a plexiglass plate. Another dish, "Break second skin," features guinea fowl encased in plaster, which diners can smash with a wooden hammer. Born in 1991 in Piedmont, Griffa trained at top restaurants and became the executive chef at the Grand Hotel Royal e Golf in December 2017, earning his first Michelin star in 2019 and being named one of Forbes' 100 most influential Italians under 30 in 2021. His passion for contemporary art influences his culinary style, and his collaboration with Ruinart has evolved through his visits to Reims. The menu emphasizes irony and fun, inviting guests to "destroy the plate, not the world."
