Brescia's Winged Victory inspires dessert at new Forme restaurant
In the year of Bergamo and Brescia as Italian Capital of Culture, the new restaurant Forme opens near Brescia, housed in a 19th-century courtyard building renovated with contemporary design. Chef Arianna Gatti, born in 1991 and trained under Philippe Leveille at Miramonti L'Altro, leads the kitchen, blending local Lombard and Abruzzese traditions. The tasting menu 'Racconti' concludes with a dessert called '(Ri)scoperta' inspired by the Vittoria Alata, a bronze statue from the 3rd century BC housed in the Capitolium of Brescia's Roman archaeological park. The statue, restored with Art Bonus funds by the Opificio delle Pietre Dure, was re-installed in 2020 in a display designed by Spanish architect Juan Navarro Baldeweg. The dessert features lychee and white chocolate mousse, raspberry gel, and sesame praline, with wings represented by crispy wafers. The restaurant also includes a bistrot, Sottoforme, for weekday lunches.
