Billy Cotton Studio and Jason Chen Design Dean's English Pub in SoHo for Restaurateurs Jess Shadbolt and Annie Shi

Chefs Jess Shadbolt and Annie Shi opened Dean's, a snug English pub next to their acclaimed restaurant King in SoHo, New York City. The interior design was created by Billy Cotton Studio and 26-year-old designer Jason Chen, who previously worked on chef Sam Lawrence's restaurant Bridges. Chen drew inspiration from coastal pubs in Suffolk, England, incorporating mahogany butcher-block counters, Douglas fir and pine-paneled walls, and vintage finds like a curved glass curio cabinet and an Edwardian washing basin repurposed as a service station. The pub opened in spring 2024, with 38 seats that were fully occupied during its first week. Shadbolt and Shi, who also co-own Jupiter at Rockefeller Center with Clare de Boer, welcomed their first children while developing Dean's. Shi's solo venture Lei in Chinatown has earned Michelin Guide accolades and is a James Beard Foundation 2026 Best New Restaurant finalist. The menu features dishes like Stargazy Pie and bacon and malt vinegar scallops, paired with wines such as Artelium Curator's Cuvée from Sussex.
