Biennale Foto/Industria 2021 catalog blends recipes with photography

The catalog for the fifth edition of Foto/Industria, the Biennial of Photography of Industry and Work promoted by Fondazione MAST in Bologna, is co-written by artistic director Francesco Zanot and chef-writer Tommaso Melilli. Running until November 28, the biennial is themed around food, with ten exhibitions in historic palaces and one at MAST. The catalog pairs each of the eleven shows with a recipe inspired by the photographer's poetics. Recipes include orange pasta with chili for Ando Gilardi, sweet-and-sour palamita for Herbert List's tuna fisheries, Russian salad for Bernard Plossu's Factory of Original Desires, roasted cauliflower for Henk Wildschut, zucchini with mint for Mishka Henner's feedlots, qizha sauce for Vivien Sansour's ancient seeds, orange plateau for Lorenzo Vitturi's Lagos, beets and raspberries for Takashi Homma's blood on snow, trout in fig leaf for Maurizio Montagna's Fisheye, chickpea chocolates for Hans Finsler, and pear tatin for Jan Groover. Zanot writes that food is language, while Melilli emphasizes sustainability, using underutilized Mediterranean fish like palamita and suggesting vegetable alternatives to beef burgers to save water.
